Start with comparable weeks
Compare the same location and the same seven trading days. Note closures, holidays, events and changes to service hours. A difference in sales shows what changed; it does not explain why.
Separate sales from customer volume
Review net sales excluding tips and tax. When complete guest or order counts are available, divide net sales by that count to calculate average spend. Keep the definition consistent: spend per guest and spend per order answer different questions.
Put reported labor beside sales
Divide the labor cost supplied in your report by net sales to calculate the reported labor percentage. Check whether the cost includes salaries, overtime and employer costs before comparing it with your own target. Look at paid hours, wage mix and service coverage together before changing schedules.
Leave missing figures unavailable
A missing cost is not zero. Sales and labor alone do not establish profit: inventory usage, food and beverage costs, rent and other expenses are still missing. A good review states these limits clearly.
Pick a follow-up you can check
If customer volume fell, look at the days and channels involved. If average spend changed, review mix and discounts. Choose a specific question rather than treating a percentage as proof of a cause.
Try it with a fictional week
Weekly turns supported daily or Monday-start weekly CSV/TSV sales and labor summaries into a short review. Choose USD or CAD to match your reports. The prototype processes report contents in your browser.

We’re seeking feedback from independent restaurant owners and managers in the US and Canada. The four-week pilot is free, with no automatic subscription. Tell us which export you use and what makes weekly reporting frustrating.
